easy and creamy rice pudding

If you are looking for an easy, quick AND comforting dessert, RICE PUDDING is the answer! It is just soooo taste-bud friendly and so loved by everyone in my family, that this creamy dessert/breakfast/whatever-you-want-to-call-it is always always at the top of our list (well.. along with crepes)!

Ingredients:

✿ 1 cup short-grain rice (important! also called “arborio rice”)

✿ 1 cup water

✿ 3 cups whole milk (or skim)

✿ 1/2 cup sugar

✿ 1/2 teaspoon salt

✿ 1 tablespoon vanilla extract

✿ 2 eggs (beaten)

✿ 2 tablespoons butter

Directions:

  1. Rinse the rice in a colander. Drain. Pour the rice in a medium pot. Cover with 1 cup water. Simmer until almost all water is absorbed, stirring with a wooden spoon once in a while.
  2. Add 3 cups of milk to the pot, stirring well after each cup addition.
  3. Simmer until thickened, stirring occasionally so it would not burn!
  4. Add the sugar, salt and vanilla and give it a good stir.
  5. Slowly add the eggs, stirring well and quick so it won’t turn into an omelette.
  6. Cook for another 2 minutes or so, or just until thickened.
  7. Remove from heat, and add the butter. Stir.
  8. Ladle into cups/bowls.
